About the Recipe
These overt fat free pizzas are completely delicious. They are a wonderful raw vegan dinner any day of the week and are also perfect to share with family and friends.
Ingredients
Pizza base
400 g of cauliflower heads
200 g of broccoli
500 g of fresh tomatoes
2 tbs of psyllium husk
1 cup of dried raw coconut flesh
1/4 cup of fresh coriander
2 tbs of fresh sweet basil
1 clove of garlic
2 pinches of salt (optional)
"Cheese"
100 g of peeled and shredded zucchini
"Cheese" marinade
80 g of chopped pumkin
30 g of red onion
2 cloves of garlic
1/2 tbs of tamari
1/2 tbs of apple cider vinegar
1/2 tsp of paprika
1/4 tsp of cayanne pepper
1/2 tsp of dried thyme
1/2 tsp of dried oregano
Pizza sauce
2 peeled beets
Topping
200 g of chopped mushrooms
100 g of chopped red onion
2 cups of fresh young spinach
200 g of chopped tomatoes
1/2 cup of fresh chopped parsley
Preparation
*Step 1 Prepare the pizza bases by putting all the ingredients into a high powered blender and blend into a smooth thick dough like mixture.
Step 2 Transfer the dough into 2 dehydrator worthy circular moulds.
Step 3 Place the moulds with the dough into a dehydrator for 23 hours at 110 'f.
Step 4 After 10 hours dehydration turn the pizza base out of the moulds and place back into the dehydrator for the remaining 13 hours.
Step 5 Prepare the "cheese" marinade by putting all of the marinade ingredients into a high powered blender and blend until smooth.
Step 6 Put the zucchini "cheese" and the "cheese" marinade into a small mixing bowl and massage together with clean hands.
Step 7 Cover and leave the "cheese" to marinade for 2 hours.
Step 8 Seperate the "cheese" pieces from the marinade, place them onto dehydrator sheets and dehydrate for 6 hours at 110 'f.
Step 9 Prepare the pizza sauce by putting the beets into a high powered blender and blend them until smooth but slightly textured.
Step 10 Assemble the pizzas by first spreading the pizza sauce onto the bases evenly and no more than 1/2 cm thick
Step 11 Add all of the toppings except for the fresh parsley, on top of the pizza sauce as desired, and return the pizzas to the dehydrator for 1 hour.
Step 12 Finish the pizzas by adding the "cheese" as desired and then the fresh parsley.
Step 13 Serve and enjoy.

I love to serve this pizza with a large, simple, salad.
