Papaya "salmon"

About the Recipe

This raw vegan 'salmon" is a delicious and creative addition to any raw vegan sushi, zoodle dish pr salad.

Ingredients

"Salmon"


1 large papaya peeled and chopped roughly into rectangle pieces about 4 cm long


Marinade


1 tbs of coconut aminos

1 cup of water

2 raw nori papers cut into approximately a square cm each

2 cloves of garlic

1/4 cup of fresh parsley

1/2 tsp of dried sage

1/2 tsp of dried rosemary


Preparation

Step 1 Put all the ingredients for the marinade into a large shallow bowl.


Step 2 Add the chopped papaya to the marinade, stir in gently making sure all the papaya is covered.


Step 3 Cover and refrigerate for 24 hours.


Step 4 After approximately 12 hours stir marinading papaya again gently.


Step 5 Remove marinade liquid from the papaya and any nori paper remaining on the pieces of papaya, by sieving over a bowl and set the marinade aside so that it could be be used as a dressing or in a sauce,


Step 6 Put the papaya pieces onto dehydrator sheets not over lapping them and dehydrate for 8 hours at 110f.


Step 7 Remove the "Salmon' pieces from the dehydrator sheets gently.


Step 8 Serve and enjoy.

Chef's Tips

  • For this recipe you will need a dehydrator.
