About the Recipe

The flavours here are incredible with the dates, galangal tomatoes blood orange and apricots and chillies it is like a mild sweet chilli sauce through noodles. Beautiful comfort food

Ingredients

Sauce


6 truss tomatoes

2 apricots

1 orange bell pepper

6 majool dates pitted

2 spring onion

1 eschallot

3 cloves of garlic

1 long red chilli

1 avocado

1/2 thumb ginger



Oodles

3 zucchinis

2 cucumbers




Preparation

Step 1 Using a vegetable peeler or oodle maker create oodles from the zucchinis and cucumbers and place into a large bowl


Step 2 Next place all the ingredients for the sauce into a blender and blend until smooth.


Step 3 Pour the sauce over the oodles and stir the sauce through throughly.


Step 4 With tongs place a large heap of sauced oodles into a serving bowl and top with slices of fresh lemon and enjoy.



Chef's Tips

  • Top with extra lemon juice when you serve if you like zestier flavours through your dish.


  • You will have extra sauce which you can store in the refrigerator for 1- 2 days.


  • You can make more oodles for the extra sauce or enjoy with fresh carrot and celery sticks.


  • If you do not like heat to your food then please do not add the chilli.
