raw. Yellow bell pepper sauce over fennel and mandarin salad

About the Recipe

Tangy sauce over the crunch of fennel, juicy pieces of mandarin and dill.



2 Yellow bell peppers

15 baby tomatoes

1 avocado

1 chilli

3 cloves of garlic

1 date

1/2 juice of a mandarin

1 juice of a lemon

10cm of lemongrass

1/2 thumb of ginger


1 bulb of fennel

1/2 mandarin

Handful of fresh dill


Step 1 Place all the ingredients for the dressing into a food processor and blend until combined really well.

Step 2 Slice the fennel thinly and place on a place.

Step 3 Top the fennel slices with segments of mandarin.

Step 4 Sprinkle some of the fresh dill on top of the salad.

Step 5 Pour some of the dressing over your salad and sprinkle with more mandarin and dill the enjoy!
