"Cheesy" leak and onion zoodles

About the Recipe

A rich creamy and satisfying raw vegan zoodle dish.



2/3 cup of soaked cashews

1/3 cup of sesame seeds

The juice of one lemon

3 cloves of garlic

1 tsp of smoked paprika

1 peeled zucchini

1 small red onion

2 dates

1 cup of water


3 large spiralised zucchinis

4 finely chopped leaks

1 small chopped red onion

Half a shredded white cabbage


Step 1 Make zoodle sauce by putting all of the ingredients into a high powered blender and blend untill smooth and creamy.

Step 2 Put all the veggies into a large mixing bowl, add the sauce and mix togehter well with clean hands.

Step 3 Transfer everything into teo serving bowls.

Step 4 Serve and enjoy.

Chef's Tips

  • For this recipe you will need a high powered blender.

  • This dish can be enjoyed cold or at room temperature, I like to serve this recipe slightly warmed some times though, and I do this by blending the sauce on the highest setting until it is 110f before mixing into the veggies.

  • I like to serve this dish with a large green salad.
