About the Recipe

This zoodle recipe is delicate yet tasty and is a great raw vegan dinner any night of the week.

Ingredients

Marinade


2 tbs of cashews

2 tbs of ground almonds

The juice of a lemon

A cup of water

A clove of garlic

1 tsp of dried sage

1 tsp of dried thyme

1 tsp of black pepper

1/2 a peeled zucchini


Vegetables to be marinaded


2 peeled and shredded carrots

1 large red shredded apple

2 large leaks finely chopped


Zoodles


4 large spiralized zucchinis






Preparation

Step 1 Make the marinade by putting all of the ingredients into a high powered blender and blend well.


Step 2 Put the chopped leaks, shredded carrots, apple and the marinade into a container, stir well, cover and leave to marinade for 4.5 hours.


Step 3 After 2 hours stir the marinading ingredients and leave again to marinade for the remainder of the marinade time.


Step 4 Put the zoodles, and all the marinade and marinading ingredients into a large mixing bowl and mix together well with clean hands makes sure the zoodles are well covered.


Step 5 Transfer everything from the mixing bowl into a serving bowl.


Step 6 Serve and enjoy.

  • For this recipe you will need a high powered blender.
