"Stir fry" lime and chilli vegetable zoodles

About the Recipe

This recipe a very flavor filled take on a traditional stir fry with noodles that will leave you thoroughly satisfied and nourished.

Ingredients

Marinade


The juice of 1 lime

1 finely chopped red chilli

1 tbs of ground peanuts

1/4 tsp of smoked paprika

2 tbs of coconut aminos

4 tbs of water


Vegetables


1 large shredded carrot

1 small chopped red onion

1 red pepper finely chopped long ways

1 yellow pepper finely chopped long ways

1 shredded cucumber with seeds removed


Zoodles


2 large or 4 small zucchinis spiralised

Preparation

Step 1 Make the marinade by putting all the ingredients into a deyhdrator safe container and stir together well.


Step 2 Put all the vegetables into the container with the marinade and mix together making sure all the vegeables are thoroughly covered.


Step 3 Put the container uncovered containing all the vegetables and marinade, into the dehydrator for 4 hours mixing again after 2 hours.


Step 4 Remove from dehydrator and put all the contents and the zoodles into a mixing bowl.


Step 5 Mix all the ingredients into the zoodles thoroughly with clean hands.


Step 6 Transfer into a serving bowl and enjoy.

Chef's Tips

  • This recipe could also be enjoyed simply marinaded and not dehydrated if prefered.
