About the Recipe
This zoodle salad is delicious, light and full of flavor.
Ingredients
Sauce
1/2 a cup of dried apricots
4 cloves of garlic
1/4 cup of ground pumpkin seeds
1 tsp of dried thyme
A thumb of fresh ginger
The juice of half a lemon
1/2 tsp of black pepper
1/4 tsp of ground mustard seeds
2.5 cups of water
Zoodles and salad
4 large peeled and spiralised zuchinnis
1 chopped large red bell pepper
2 chopped large cucumbers
the kernals of 2 raw corn on the cob
2 finely chopped leaks
1 finely chopped small red onion
2 peeled and shredded carrots
Preparation
Step 1 Make the zoodle sauce by putting all of the ingredients into a high powered blender and blend intil thick and smooth.
Step 2 Place the zoodles and other salad ingredients into a large mixing bowel and add the sauce.
Step 3 Mix together well using clean hands.
Step 4 Transfer into serving bowels, serve and enjoy.
