Carrot, coriander and orange "pasta"

About the Recipe

A delicate, tasty and nourishing raw vegan "pasta" dish

Ingredients

Marinade


2/3 cup of walnuts then freshly ground

1 tbs of tamari

The juice of two oranges

1 tsp of smoked paprika

2 tbs of chopped fresh coriander

1/4 tsp of black pepper


Veggies


4 peeled and shredded carrots

2 peeled and shredded cucumbers

1 small red onion finely chopped



"Pasta"


4 -5 large spiralised zuccchinis

Preparation

Step 1 Place all the veggies into a large dehydrator worthy container.


Step 2 Make the marrinade by mixing together all the ingredients by hand in a small bowl.


Step 3 Add the marinade to the veggies and mix together well with a spoon.


Step 4 Place everything still in the container into the dehydrator for 3 hours


Step 5 Remove form the dehydrator, add the spiralised zucchinis, mix together well with clean hands and return to the dehydrator for another hour.


Step 6 Transfer to two serving bowls and garnish with a couple of pinches of fresh corriander.


Step 7 Serve and enjoy.

Chef's Tips

  • For this recipe you will ideally need a dehydrator, though it could definitely also be enjoyed not dehydrated.
