Coconut veggie curry zoodles

About the Recipe

A personal favorite zoodle recipe, this is an absolutely delicious raw vegan take on curry that is full of flavor.

Ingredients

Marinade


2 tbs of soaked cashews

1 tbs of soaked peanuts

1/2 a red chilli

2 tbs of coconut aminos

2 dates

2 dried apricots

The juice of one lime

2 tsp of mild curry powder

1/2 tsp of smoked paprika

1/2 cup of raw coconut flesh dried or fresh

1 dehydrated tomato

1/2 cup of water


Veggies


1 shredded carrot

1 shredded cucumber with seeds removed

1 red bell pepper cut finely long ways

1 small red onion chopped finely


Zoodles


2 large zucchinis or 4 small


Preparation

Step 1 Make the marinade by putting all the marinade ingredients into a high powered blender and blend untill think and smooth.


Step 2 Put veggies into a dehydrator worthy container, cover veggies with marinade and mix together well.


Step 3 Cover and put into a fridge for 3 hours.


Step 4 Stir again, uncover the cotainer and put into the dehydrator for 3 hours on 110f.


Step 5 Put zoodles into a mixing bowl, add the marinade and veggies and mix together thoroughly with clean hands.


Step 6 Transfer to a serving bowl, and enjoy.

Chef's Tips

  • For this recipe you will need a high powered blender and a dehydrator

  • This recipe can also be enjoyed with the veggies marinaded for 6 hours and without dehydrating if prefered.
