About the Recipe

Simple but delicious and creamy slaw of carrots, cabbage and red onions.


Coleslaw vegetables

140g of peeled carrot

250g of shredded cabbage

2 small finely chopped red onions


1/4 cup of soaked raw cashews

1/4 cup of soaked pumpkin seeds

1/4 cup of fresh chopped cilantro

1 tsp of paprika

2 dates

1/2 cup of water

150g of peeled zucchini


Step 1 Using a vegetable peeler shred the whole carrot only disposing of the very core.

Step 2 Put the shredded carrot, one of the chopped onions, and the shredded cabbage into a mixing bowl.

Step 3 Put the soaked raw cashews and pumpkin seeds, the other onion, fresh cilantro, paprika, dates.water and zucchini into the blender and blend until smooth and creamy.

Step 4 Pour the dressing all over the vegetables in the mixing bowl and use your freshly washed hands to thoroughly distribute the dressing.

Step 5 Serve and enjoy.

  • I served the Coleslaw with fresh corn and lettuce.
