Lightly spiced marinated.
Ingredients
Vegetables
1 chopped eggplant
1/2 finely chopped green cabbage
2 carrots shredded with a vegetable peeler
1 finely chopped red onion
1 chopped red pepper
Marinade
2 small red chillis
4 tbsp coconut aminos
2 tbsp raw shredded coconut flesh
2 tbsp water
Preparation
Step 1 Put all ingredients in a bowl and mix thoroughly.
Step 2 Cover and marinade for 12 hours.
Step 3 Mix thoroughly then cover and marinade for another 12 hours.
Step 4 Put onto dehydrating sheet and dehydrate for 3 hours.
Step 5 Serve and enjoy.
Chef's Tips
You will need a dehydrator for this dish. i use a Lecon dehydrator. You can alternatively try using your oven at it's lowest heat with the door ajar. You would have to watch the food closely as it dehydrated in the oven.
I served this dish with zoodles and avocado.
