Marinated garlic & lemon cauli rice

About the Recipe

This tasty cauli rice recipe is great served with any salad, or raw vegan curry or "stir fry" recipe.


Cauli rice

1 large head of cauliflower with all the leaves and thick stalks removed

2 peeled and chopped carrots

1 roughly chopped red bell pepper

1 roughly chopped green bell pepper


2 tbs of coconut aminos

The juice of one lemon

2 cloves of garlic crushed

1/2 table spoon of fresh thyme finely chopped


Step 1 Put the cauliflower, carrot and bell peppers in a food processor and pulse about 5 times, or until the consistancy is simular to rice.

Step 2 Remove your "rice" mixture from the food processor and put into a small mixing bowl.

Step 3 Add the garlic, coconut aminos, and cilantro to the bowl and mix into the "rice" very thoroughly.

Step 4 Cover the "rice" mixture and allow to marinade in the fridge for 6 hours stiring after 3 hours.

Step 5 Serve and enjoy.

Chef's Tips

  • I serve like to serve this recipe with zoodles, greens, cherry tomatoes, avocado and a little cilantro, but it is also great with any other salad.
