Mini seasonal apple pies

About the Recipe

A delicious raw take on an old favourite.

Ingredients

Pastry


1 cup of almonds, ground

1 cup of pitted dates

1 small peeled chopped apple


Filling


1 cup of soaked cashews

4 small pitted dates

tsp of cinnamon


Topping


1 small peeled apple

tbsp dried shredded coconut flesh, or desiccated coconut

juice of half a lemon

Preparation

Step 1 Blend pastry ingredients together in a high powered blender until it becomes a dough.


Step 2 Set aside 1/4 of the dough for later.


Step 3 Separate dough into ten equal parts, roll each into a ball and flatten to a cookie shape.


Step 4 Press each into a muffin tin.


Step 5 Freeze for 20 mins.


Step 6 Blend filling ingredients together in a high powered blender until smooth.


Step 7 Thinly slice the apple and drizzle with lemon juice.


Step 8 Roll out remaining dough and cut ten tops in the shape of you choice (I chose stars).


Step 9 Spread about a desert spoonful of filling onto each base.


Step 10 Arrange the apple on the filling and top with your shaped pastry.


Step 11 Sprinkle with shredded coconut to look like powdered sugar.


Step 12 Freeze for further 15 mins.


Step 13 Serve and enjoy.

Chef's Tips

  • You will need a dehydrator for this dish. I use a Lecon dehydrator.
