About the Recipe

A simple yet rich and delicious pesto dish which is basil free

Ingredients

Pesto sauce


1/2 Cup of soaked cashews

2 Cups of chopped kale

2 Tbsp of chopped parsley

60g of peeled zucchini

3 Cloves of garlic

1 Tsp of smoked paprika

1 Tsp of black pepper

2 Avocados


Zoodles


4 Large or 4 small spiralized zucchinis

Preparation

Step 1 Put all the sauce ingredients except for the chopped parsley and half the avocado, into a high speed blender and blend until smooth.


Step 2 Add more avocado if needed according to taste.


Step 3 Put the zoodles, sauce and chopped parsley in a mixing bowl and mix together thoroughly with clean hands.


Step 4 Transfer to two serving bowls and enjoy.

Chef's Tips

  • For this recipe you will need a high speed blender

  • If your avocados are large you may only need 3 as the amount required depends on your personal taste

  • I serve this recipe with a large colourful salad
