About the Recipe

This stuffed beef steak tomato recipe is a wonderful and tasty raw vegan dish to share with family and friends.

Ingredients

Stuffed tomatoes


2 large good quality preferably organic beef steak tomatoes

1 peeled and chopped mango

2 small chopped red onions

The flesh scooped out of both tomatoes

1/2 tsp of cumin seeds

1/2 tsp of smoked paprika

1/2 of dried fennel

1 clove of crushed garlic

1/2 tsp of mustard seeds

1/2 a tsp of dried basil

1/2 tsp of dried oregano

1/4 tsp of black pepper

1 tsp of dried chilli flakes

1/2 of tamari

Preparation

Step 1 Prepare the beef steak tomatoes by scooping out the flesh leaving about a cm of flesh all around the tomato.


Step 2 Put the tomato flesh into a mixing bowl and chop up roughly into small peices.


Step 3 Add all of the remaining ingredients to to mixing bowl and mix together well.


Step 4 Put all of the mixture into a cheese cloth and squeeze out thoroughly.


Step 5 Stuff the mixture back into the tomatoes equally.


Step 6 Place the stuffed tomatoes into a deydrator for 1 hour.


Step 7 Transfer the tomatoes onto a serving dish.


Step 8 Serve and enjoy.

  • For this recipe you will need a dehydrator.

  • For this recipe you will need a cheese cloth.

  • This recipe is wonderful served as part of a large raw vegan dinner of salad and dressing, though both tomatoes are great served as a simple and tasty raw vegan meal for one.
