raw. Mango & coriander noodles with nori

About the Recipe

Sweet and sour flavours with the saltiness of the nori.

Ingredients

Sauce

1 mango

1 avocado

1/2 leek

1 avocado

140g sweet berry truss tomatoes

1 cup of chopped coriander

1 spring onion

3 cloves of garlic

1 medjool date (pitted)

2 thumb of turmeric

2 thumbs of ginger

1/2 small red chillies

Juice of a lime

Juice of a lemon

Juice of 1/2 a ruby grapefruit

Juice of 1 mandarin


Oodles


2 cucumbers 

2 zucchini’s 


Garnish


Nori seaweed pieces

Preparation

Step 1 Place all of the ingredients except the coriander into the blender.


Step 2 Blend until sauce is smooth.


Step 3 Add the coriander and blend again for approximately 10 sec.


Step 4 Create oodles from the cucumbers and zucchini’s and place into a large bowl.


Step 5 Pour sauce over the oodles and combine and mix together well.


Step 6 Serve a heap of the oodle and sauce mix onto a serving plate.


Step 7 Top with the nori pieces and enjoy.
