About the Recipe
This is such a flavourful dressing. It has flavours of basil, mandarin, tomato and ginger.
2 cups of fresh basil
1 1/2 cups baby spinach
1/2 thumb of ginger
1 cup of baby tomatoes
1/2 juice of a lemon
1/4 meat of a coconut (See Chef’s Tips for fat free option)
Step 1 Chop zucchini and place it into the blender with all the other ingredients for the dressing.
Step 2 Blend on HIGH SPEED for approx 1 min or until dressing is smooth.
Step 3 Enjoy over your favourite salad ingredients ort as a sauce dip or sauce.
For a FAT FREE option of this dressing you can replace the coconut meat with a zucchini
If you like a more pesto taste to this dressing you can add 2 cloves of garlic.
