About the Recipe
This is a very simple Winter salad. This salad uses a simple mix of citrus and Himalayan salt as the dressing over lots of vegetable noodle
Ingredients
Noodle Salad
1 zucchini
1 cucumber
1 carat
2 cups of baby tomatoes
1 red bell pepper
1 1/2 cups of baby spinich
Handful of dill
Handful of coriander
1/2 long red chilli
1/2 small avocado
Top green part of a spring onion
Dressing
Juice of 1/2 blood orange
Juice of a lemon
1/2 teaspoon of himalayan salt
Preparation
Step 1 Create vegetable noodles out of the zucchini, cucumber and carrot with a spiralizer. Place them into a large salad bowl.
Step 2 Next finely chop the tomatoes, red bell peppers and baby spinach and place into the salad bowl with the vegetable noodles.
Step 3 Chop the dill and coriander and place into a salad bowl.
Step 4 Por the blood orange juice and lemon juice over the top of the salad.
Step 5 Then serve the salad with chopped green part of spring onion, chopped chilli, chopped avocado and himalayan salt.
Chef's Tips
If you do not hsve a spiralizer you can use a vegetable peeler to make noodles.
