About the Recipe
This a vegtable melody full of a garlic and pumpkin taste. Served with creamy slices of avocado.
Ingredients
Sauce
1 tomato
1/2 butternut pumpkin
2 celery sticks
1-2 garlic cloves
1/4 Juice of a lemon
1 medjool date (pitted)
1/4 head of cauliflower
1/4 cup of chopped chives
Vegtables
Handful of rocket
Handful of baby spinich
2 small zucchinis
1/5 of a purple babbage
Handful of fresh dill
1 corn (kernals only)
Serve with
Slices of avocado
Wedge of lemon
Preparation
Step 1 Grate the zucchini, chop the purple cabbage thinely and place into a bowl with the rocket, spinich, dill and corn.
Step 2 To make the sauce chop the tomato, pumkin and celery and place into the blender with the lemon, garlic and medjool date. Blend until combined well.
Step 3 Now chop the cauliflower and add to the nblender with the chives and blitz this through the sauce.
Step 4 Pour the sauce over the vegtables in the bowl and combine well.
Step 5 Serve with a few slices of avocado and extra lemon to taste.
