About the Recipe

These super simple oodles are super tasty with a fresh and uplifting crunch once you mix the bean sprouts through

Ingredients

Sauce


Meat of 1 coconut

2 handfuls of baby truss

tomatoes

з cun of coconut water

fresh from a coconut

1 red bell pepper

1 vellow bell pepper

1 small red chilli

2 cloves of garlic

4cm cube of ginger

4cm cube of galangal

2 medjool dates (pitted)

1/4 spring onion

Juice of 1/2 a ruby grapefruit


Oodles

2 cucumbers

2 zucchini's


Serve with

Extra ruby grape fruit

1 cup of bamboo shoots

1/4 avocado

Teaspoon of fresh chopped chives

Preparation

Step 1 Create oodles from your cucumbers & zucchini's with a spiralizer or vegetable peeler and place into a large


Step 2 Next blend all the ingredients for the sauce until


Step 3 Pour the sauce over the oodles in the bowl and mix together well.


Step 4 Then place onto a serving dish a portion of the bamboo


Step 5 Top the bamboo shots with a helping of the saucy


Step 6 Slice the avocado and place on top with some of the chives.


Step 7 Serve with the extra grapefruit.

Chef's Tips

  • If you do not like spicy food then please to not add the chilli
