About the Recipe
Tangy, creamy salad with flavours of the sea.
Ingredients
Dressing
900g heirloom Cherry tomatoes
1 spring onion
2 small red chillies
Thumb of turmeric
2 long green chillies
Juice of 2 lemon
6 medjool dates ( pitted )
1 thumb of galangal
Juice of a lime
1 yellow bell pepper
Handful of basil
Handful of coriander
Salad
2 carrots
2 zucchini’s
2 cucumbers
Handful of baby spinach
2 handfuls of mix leaf lettuce mix
2 handfuls of cos lettuce
1 coconut ( meat only)
1 avocado
1 long green chilli ( I used this as garnish )
2 tablespoons of Irish Sea moss ( I used air dried flakes )
Garnish
1 jalapeño
1 teaspoon of Irish Sea moss ( I used air dried flakes )
Preparation
Step 1 Blend together all the ingredients for the dressing in a food processor.
Step 2 Chop up and place all the ingredients for the salad into a large bowl (Iused the spiraliser for the zucchini, carrot and cucumbers)
Step 3 Top the salad with the dressing
Step 4 Serve in your favourite bowl and top with extra jalapeño and irish sea moss.
