Light & sweet curry flavours that go well with the coconut & rocket bed.
Ingredients
Sauce
1/2 a leek
1 avocado
1 green Thai chilli
4 pitted dates
Thumb of turmeric
Thumb of ginger
2 thumbs of galangal
Juice of 1 mandarin
Juice of 1 lemon
Juice of 2 limes
Noodles
2 carrots
2 zucchinis
Serve with
Meat of 1 coconut
Handful of fresh rocket
Wedge of lime
Fresh Thai chilli (red or green)
Preparation
Step 1 Create noodles from the carrot & zucchini then place into a large bowl.
Step 2 Next blend all the sauce ingredients together in a blender.
Step 3 Combine sauce & noodles in the bowl well.
Step 4 In a serving bowl place a handful of rocket & then with tongs get a handful of saucy noodles & sit the noodles on top of the rocket bed in your serving bowl.
Step 5 Then scoop some meat from a coconut & put next to your saucy noodles in the serving bowl.
Step 6 Finally chop a green chilli and sprinkle some over your dish before you serve with a wedge of lime.
Chef's Tips
Squeezing extra lemon over the rocket before you put the curry on top gives a really nice flavour to this dish.
