Light, creamy and fresh summer salad.
Ingredients
Salad
1 cup of chopped mango
1 avocado
4- 5 cucumbers
1 cup of chopped parsley
1/2 cup of chopped coriander
1/4 cup of chopped chives
Juice of a lemon
thumb of grated ginger
1 green chilli
Preparation
Step 1 Make strips with a vegetable peeler from the cucumber and place into a large salad bowl.
Step 2 Add to the bowl all the other ingredients and mix together well.
Step 3 Serve and enjoy!
