About the Recipe

Thick coconut based sauce that is fragrant and spicy.

Ingredients

Sauce


1 cup of coconut meat

1/2 cup fresh coconut water

1 mango

1 capsicum

12 baby tomatoes

4 medjool dates (pitted)

1/2 the juice of a ruby grapefruit

1/2 juice of a lemon

4 cloves of garlic

2 thumbs of ginger

2 thumbs of turmeric

1/2 small red chillies



Oodles


4 cucumbers



Garnish


1/2 grated carrot

10cm of spring onion

Extra lemon wedges

1/2 bullet chilli


Preparation

Step 1 Blend all sauce ingredients together well in a food processor.


Step 2 Create cucumber oodles with a spirilizer or vegetable peeler.


Step 3 Place cucumber oodles into a bowl and cover with desired amount of sauce.


Step 4 Garnish with carrot, spring onion, extra lemon & chilli.


Step 5 Serve and enjoy!

Chef's Tips

  • There will be plenty of satay sauce so store what you don’t use in the fridge, it should last 2- 3 days.
