Really tangy flavours of grapefruit with a creamy leek texture through cucumber and zucchini noodles
Ingredients
Sauce
2/3 of a leek
1 carrot
1 avocado
2 medjool dates (pitted)
1 thumb of galangal
1 thumb ginger
Juice of a grapefruit
Juice of a lime
1/4 chilli
Noodles
2 zucchinis
2 cucumbers
Preparation
Step 1 With a vegetable peeler make noodles from your cucumbers and zucchini's and place into a large bowl.
Step 2 Place all the ingredients for the sauce into a blender and blend until smooth.
Step 3 Pour the sauce over your noodles and stir through throughly.
Step 4 With some tongs place some saucy noodles into a serving bowl and enjoy.
