About the Recipe
The sweetness of mango with flavours of lemongrass, coriander & chives is lifted by the the ginger and freshness of the cucumber noodles.
Ingredients
Mango & herb salsa
20 baby tomatoes
2 celery stalks
1 avocado
2 medjool dates (pitted)
1/2 small red chilli
2 lemons (juice of)
3 cloves of garlic
1 1/2 thumbs of ginger
1 cup of fresh coriander
1 cup of fresh chives
10cm lemongrass
Oodles
3 cucumbers
Garnish
10cm of spring onion
Tablespoon of chopped chives
Preparation
Step 1 With a vegetable peeler or oodle maker create noodles from the cucumbers and place them into a large bowl and wrap the oodles in a tea towel (this will absorb excess moisture).
Step 2 Blend in a blender all the ingredients for your mango salsa.
Step 3 Remove the tea towel from the oodles in the bowl & then pour your sauce over them and stir it through well.
Step 4 Place a heap of the salsa oodle mix into your favourite bowl and top with chopped spring onions and chives then enjoy.
Chef's Tips
Extra lemon juice when you serve is always nice too.
