This is a quick, easy flavourful meal that has the earthy notes of turmeric mixed with the sweetness of mangoes.Love the colours here of the mango and turmeric.
Ingredients
Sauce
2 mangos
1 avocado,
1/2 chilli
Juice of 1 lemon,
1 thumb turmeric,
1/2 thumb ginger
Pasta
2cucumber
2zucchini
Preparation
Step 1 Blend all the ingredients for the sauce together with in a food processor.
Step 2 Make vegetable pasta from the cucumber and zucchini with a vegetable peeler. Place the pasta ribbons into a a bowl.
Step 3 Pour the sauce over the pasta ribbons and mix together well.
Step 4 Serve in a bowl and enjoy!
