About the Recipe

Spicy flavours of Mexico in a slaw mix over zucchini oodles.


Slaw dressing

250g baby tomatos

1 mango

1 red bell pepper

1 spring onion

1/2 cup of fresh coriander

1 medjool date (pitted)

2 cloves garlic

1 thumb of ginger

1 thumb of turmeric

1/2 chillie

1 grapefruit ( Juice of )

2 lemon ( Juice of )


300g dry Coleslaw Mix (refer to 'Chef's Tips')


3 zucchinis


Step 1 Combine all slaw dressing ingredients together in a blender, and blend until smooth.

Step 2 Put the dry slaw mix into a large bowl and pour the dressing from the blender over the dry slaw and mix together well.

Step 3 Take your zucchinis and with a vegetable peeler create nice thick zoodles and place into a separate bowl.

Step 4 On a serving plate place a handful of zoodles and a large scoop of your slaw and enjoy!
