About the Recipe

Chunky tomato sauce over squash noodles & coriander in lettuce bowl.

Ingredients



Sauce


50 baby vine ripened tomatoes

3 cloves of garlic

1/2 small red chillies

2 celery stalks

Thumb of ginger

Thumb of turmeric

Juice of 1 lemon




Chutney


1 Yellow pepper

1 Mango

2 Date

1/2

1/2 juice of mandarin

1/2 juice of lime



Oodles


5 squash



Bowl


1 head of Iceberg lettuce



Garnish


1/2 cup of fresh coriander

1/2 cup of fresh parsley

1/2 a grapefruit

Preparation

Step 1 Create oodles with a spirilizer from the squash.


Step 2 Create the sauce by placing all the ingredients into a food processor and blend well.


Step 3 Create the chutney by placing all the ingredients into a food processor and blend well.


Step 4 Create a lettuce bowl from the lettuce by chopping it in half and taking out the middle leaves of each half of lettuce as this creates a bowl and place onto a serving dish.


Step 5 Chop the parsley and coriander well and place a handful of it in the lettuce bowl.


Step 6 Top at with some of the squash oodles


Step 7 Top the oodles with some of the blended tomato sauce.


Step 8 The pour on top of this the chutney.


Step 9 Finish the dish off with a little more of the herbs and a wedge of grapfruit


Step 10 Repeat steps 1- 9





Chef's Tips

  • You will need a food processor

  • If you do not have a spirilizer you can make vegetable noodles with a vegetable peeler.
