About the Recipe

Coriander, chives with ginger and galangal lift the taste of orange tomato & grapefruit in this dish

Ingredients

Sauce


1 punnet of baby grape orange tomatoes (200g)

1 avocado

Juice of a grapefruit

2 Thai red chillies

1 spring onion

1 cup of fresh chopped chives

1 cup of fresh chopped

coriander

1/2 thumb of turmeric

1/2 thumb of galangal

1 thumb of ginger

1 clove garlic

2 medjool dates


Oodles


2 carrots

2 Zucchinis


Garnish


1 stalk of coriander fresh leaves

2 stalks of fresh chives

Preparation

Step 1 Create oodles with a vegetable peeler and place into a large bowl.


Step 2 Place all the ingredients for the sauce into a blender, and blend until smooth.


Step з Pour the blended sauce over the oodles and mix the sauce through well with tongs.


Step 4 Place a heap of the oodle mix into a serving bowl and garnish with some chopped coriander and chives then.


Chef's Tips

  • Any sauce vou do not use, vou can keep in the refrigerator for up to 2 days. You might want to use this with more oodles, as a sauce to add flavour to wraps or sliders. I also use this as a dip with cut vegetables.
