raw. Pesto kale n noodle slaw with pear & dulse

About the Recipe

This is full of fresh herbs and a sweetness of pear with the salty taste of dulse. The great textures from the kale, vegetables & noodles make this dish flavourful & fun.

Ingredients

Pesto sauce


1 cup of baby spinach

1 cup of basil

1 cup of coriander

2 tomato

1/2 spring onion

Thumb of turmeric

2 cloves of garlic

1 avocado

1/2 small red chillies


Salad


300g kale slaw

2 cucumbers

1/2 cup of dulse

1 pear

1/3 spring onion

1 small red chillies

Juice of a lime.





Preparation

Step 1 Place all the pesto ingredients into a blender and blend until smooth (add a little water if you like a thinner sauce).


Step 2 In a large salad bowl place your kale slaw.


Step 3 Next create oodles from your cucumbers (with a spiralizer or vegetable peeler ) then place into the bowl on top of the kale slaw.


Step 4 Cut up your dulse and place into the salad bowl.


Step 5 Pour your pesto dressing onto your salad.


Step 6 Slice a pear and put into your salad.


Step 7 Top your salad with chopped spring onions and chilli.


Step 8 Finish with the juice of a lime and serve.

Chef's Tips


  • If you do not like spice in your food then you can leavet he chilli out


  • You may find you do not need all the pesto sauce you make. You can store this in the refrigerator for 3 days. If is a great dip & spread as well as a dressing.
