About the Recipe

Creamy bell pepper & tomato zing that is cut beautifully with the ruby grapefruit and lifted with spices like galangal.

Ingredients

Sauce


3 red bell peppers

350g grape tomatoes

2 cloves garlic

1 ruby grapefruit (juice of)

1/2 lemon (juice of)

1/2 thumb ginger

1/4 thumb of turmeric

2cm cube of galangal

1 small red chilli



Coodles


6 Lebanese cucumbers

Preparation

Step 1 Create coodles with an oodle maker or vegetable peeler and place into a large bowl.


Step 2 Blend well all the ingredients for the sauce in a blender until smooth.


Step 3 Pour sauce blend over coodles and stir sauce through the coodles well.


Step 4 Using some tongs place a heaped pile of coodle sauce mix in a bowl and enjoy.
