About the Recipe

Super yummy raw vegan noodles ( zoodles ) with a garlic and ginger sauce. This is a savoury dish that is simple and super yummy wit a crunch from crushed raw. corn & capsicum crisps.

Ingredients

Sauce


600g of grape tomatoes

1/2 red bell pepper

1/2 spring onion

Juice of a half lemon

2 medjool dates (pitted)

2 garlic cloves

1/ thumb of turmeric

1/2 thumb of ginger

Handful of fresh coriander



Noodles


6 zucchinis

Crunchy topping

2-3 of my raw. Corn & capsicum crisps

Preparation

Step 1 Create noodles from your zucchinis and place into a large bowl.


Step 2 Next blend together all the sauce ingredients and then pour over vour zucchini noodles.


Step 3 Place into a serving bowl and top with some crushed raw.Corn & capsicum crisps.

Chef's Tips

  • You could add some thinly sliced cabbage to this dish (just stir it through before you serve it) to create a more traditional taste to this dish.
