About the Recipe
Bitter sweet notes of ruby grapefruit with the sweetness of tomato's & bell peppers with the fruitiness of apricots & dates through a kale salad with the meaty creaminess of coconut with a light hint of curry flavour.
Ingredients
Sauce
500g cherry truss tomatoes
3 red bell peppers ( core and seeds removed)
Juice of 1 lemon
Juice of a 1/2 a rubygrapefruit
1 spring onion
2 thumbs of ginger
2 thumbs galangal
2 thumb of turmeric
2 sprigs of curry leaves
1/2 cup of fresh chopped chives
3 small red chillies
1 long chilli
8 dates medjool dates (pitted)
1/2 a leek
2 sprigs of curry leaves
1 avocado
3 cloves of garlic
Kale Slaw
500g Burraneer Grocer kale slaw
Serve with
meat of 1 coconut
1/2 ruby grapefruit
Preparation
Step 1 Place all ingredients for the sauce into a blender and blend until smooth
Step 2 Place into a mixing bowl your kale slaw and sauce. Mix these together well
Step з Place a heap of the mix into a serving bowl and add a
few scoops of coconut meat on top.
Step 4 To finish squeeze some ruby grapefruit juice to serve.
Step 5 Repeat steps 3 and 4.
Chef's Tips
If you are not in the area of Burraneer Grocer you can get the pre made Kale slaw mix there. Or try your local Woolworths supermarket to see if they do a pre-maid kale slaw or salad mix.
IThis dish tastes great with served with extra chilli.
