About the Recipe

The tangy flavours of lemon marinated eggplant with a creamy apricot sauce through zucchini oodles.

Ingredients

Eggplant


1 eggplant



Marinade


1/2 lemon ( juice of )

2 chillies

Handful of fresh chives ( cut )



Sauce


8 apricots (pitted)

2 mejool dates (pitted)

1 avocado

1 eshallot

1/4 thumb of ginger

1/4 chilli


Zoodles


4 zucchinis

Preparation

Step 1 Chop your eggplant into cubes and place into a bowl with all your marinade ingredients and stir them around thoroughly and continue to do this every 5 min as you prepare the rest of the dish.


Step 2 Place all the sauce ingredients into a blender and blend until smooth and creamy ( it will depend on your blender as to how long you need to blend your sauce ). Now pour this sauce over the marinating eggplant and coat the eggplant well in the sauce, and place this to the side to rest as you create your zoodles.


Step 3 Create zoodles with an oodle maker or vegetable peeler (refer to picture 4 for a example)


Step 4 Place a handful of zoodles into a serving bowl and top with the saucy eggplant mix, and then serve.
