raw. Tomato and basil soup with an avocado crunch

About the Recipe

This is my immunity soup that is incredibly healing and a great immune system boast.



2 punnets of baby tomatoes

2 Roma tomatoes

2 large red bell peppers

4 celery stalks

1 large chilli

1 jalapeño

2 medjool dates (pitted)

2- 3 thumbs of ginger

2 thumbs of turmeric

4 cloves of garlic

1 mandarin (juice of

1 lime (juice of)

2 lemons (juice of)

1/2 avocado

Basil & avocado crunch topping

Handful of snow pea shoots

1/2 avocado

10cm of spring onion

3 Tablespoons of mung beans

2-3 lemon wedges


Step 1 Blend all soup ingredients together in a blender and then pour mix into a serving bowl.

Step 2 Scoop half an avocado into your soup bowl blend.

Step 3 Next sprinkle chopped spring onion, mung beans, and basil on to your soup

Step 4 Then finish with snow pea shoots and a wedge of lemon.

Chef's Tips

  • Add more mung beans to add more crunch to your dish.
