About the Recipe
This is one of my favourites. It is a bright flavour filled dish. That is spicy and lifted by the sweet notes of mango. The dulse gives it a salty kick with the aromas of turmeric.
Ingredients
Sauce
1 yellow bell pepper
1 roma tomato
1/2 avocado
1/2 mango
1 cloves of garlic
1/4 leek
1 thumbs of turmeric
1/2 thumb of ginger
1/2 thumb of galangal
1/2 small red chilli
Juice of a 1/2 lemon
Juice of a 1/2 lime
Salad
2 cucumbers
1 zucchini
2 handfuls of dulse
Handful of heirloom baby tomatoes
1 chillie
Preparation
Step 1: Place all your sauce ingredients into a blender. Blend well until smooth.
Step 2: Create oodles from the cucumber and zucchini with an oodle maker or vegetable peeler.
Step 3: Cut up and place tomato's and chilli with the dulse into the same bowl.
Step 4: Pour the sauce over your salad and stir through well.
Step 5: Take a heap of your sauced salad and place onto a plate to enjoy.
Chef's Tips
Add more or less chilli depending on the heat level you enjoy
