About the Recipe
Beautiful flavours of turmeric, herbs, citrus and avocado through oodles.
Ingredients
Salad
1 carrot
3 zucchini’s
2 avocados
1 spring onion
2 cloves of garlic
2 jalapeño’s
1/2 small red chilli
10cm lemongrass
1/4 cup parsley
1/4 coriander
1/4 cup of chopped chives
2 tablespoon of dill
1/2 thumb of ginger
1 thumb of turmeric
Dressing
1 ruby grapefruit (juice only)
1 lemon (juice only)
1 lime (juice only)
Garnish
1 tablespoon of ground paprika
2 tablespoons of ground turmeric
1 teaspoon of Himalayan salt
1 teaspoon of ground black pepper
Preparation
Step 1 Create oodles from the carrot and zucchini’s and chop the rest of the salad ingredients and place into a large bowl.
Step 2 Squeeze the juice of a lime, lemon and ruby grapefruit into the bowl and mix through salad well.
Step 3 Serve a heap with the garnish on top
