raw. Vietnamese Salad with salty garlic dressing (no added salt)

About the Recipe

Like a Vietnamese spring roll in a bowl.



1 cup of baby tomatoes 

1/2 yellow bell pepper

1 sticks of celery

1/8 chilli (remove seeds)

1 garlic clove

1/4 thumb of ginger

Juice of a lime


1 cup of mixed greens

1 cup rocket

2 small cucumbers 

1 carrot

1 cup of baby tomatoes 

1 cup chopped celery

1/2 cup chopped parsley

1 small avocado 

5 medjool dates pitted

1 tablespoon of coriander

1/4 red chilli (remove seeds)

1/4 spring onion


Step 1 Place all the ingredients for the dressing into a blender.

Step 2 Chop the mixed leaf and rocket and place into a salad bowl.

Step 3 Peel the cucumber and spiralize it and the carrot and place into the bowl with the chopped celery and parsley.

Step 4 Chop the avocado, medjool dates and baby tomato and place into the salad bowl.

Step 5 Then chop the chilli, spring onion and sprinkle on top of the salad.

Step 6 Place the coriander on top and pour your desired amount of dressing over the salad.
