About the Recipe
Simple creamy vegetable noodles with fresh sweet yellow grape tomatoes , citrus, turmeric and ginger zesty sauce.
Ingredients
Sauce
1 punnet of orange grape tomatoes (200g )
1 orange bell pepper ( core & seeds removed
1 avocado
1 spring onion
5 baby yellow vine ripened tomatoes
Juice of lime
Juice of mandarin
1/2 thumb ginger
1/2 thumb of galangal
2 cloves of garlic
1/4 Thai red chillies
2 medjool dates (pitted)
Zoodles
4 Zucchinis
Garnish
5cm spring onion
1 carrot
Wedge of lime
Preparation
Step 1 With a vegetable peeler create oodles from the zucchinis & place into a large bowl.
Step 2 Do the same with the carrot and place into a separate
Step 3 Place into your blender place all ingredients for the sauce and blend unt smooth.
Step 4 Pour enough of the sauce through your zucchini noodles to coat them and stir through well.
Step 5 Into your serving bowl place a heap of the sauced zoodle mix.
Step 6 op this with some carrot ribbons, finely chopped spring onion and a piece of lime.
Chef's Tips
Any extra sauce you can refrigerate for 1-2 days.
Add any extra salad & vegetables to this dish when you serve to suite your taste.
