Sweet potato, corn and broccoli soup with rosemary

About the Recipe

A slightly warmed hardy soup. It is full of sweet potato, corn and broccoli. it was aromatics from garlic, rosemary and jalapeño.



2 large sweet potatoes 

2 corns

2 tomatoes 

2 garlic cloves

Juice of half a lemon

3 medjool dates (pitted)

1/3 jalapeño 

1/2 broccoli 

Sprig of Rosemary 


Step 1 Peel the sweet potato and chop it into cubes. Then place it into a high speed blender

Step 2 Take the corn kernals off of the corn cob and place the kernals into the blender.

Step 3 Chop tomato and place it into blender with garlic, lemon juice, medjool dates and jalapeno. Then blend all together well for 3 min until warmed.

Step 4 Chop the broccoli and place it with the rosemary into the blender and blitz the broccoli and rosemary through the soup.

Step 4 Pour soup out into bowls and enjoy!!!
