About the Recipe
This is a great warm soup for the colder months. It is rich, full of flavour and the added avocado makes it creamy.
1 butternut pumpkin
1 thumb of ginger
1/4 wedge of lime
Handful of basil
Step 1 Cut up the pumpkin then remove the skin and seeds. Place the chopped pumpkin into a high speed blender.
Step 2 Add to the blender cut up the tomato and place into the blender with the ginger, chilli and lime (that has the seeds and skin removed). Then blend together for approx 2 min or until it fprms a slightly warmed soup.
Step 3 Now add the basil to the the blender and blitz the basil through the soup.
Step 4 Serve the soup in a soup bowl with some avocado sliced on top and extra basil leaves.
Use a tamper to help you when you blend the soup.
