About the Recipe

This corn salad is delicious and makes a great sandwich filling.

Ingredients

Corn salad


The kernels of two raw corn cobs

One tbs of fresh chopped cilantro

1/4 cup of dried shredded coconut flesh

1/2 tsp of dried onion powder

1/2 tsp of dried fennel

1/2 tsp of smoked paprika

1 tsp of tamari

1/4 cup of water


Preparation

Step 1 Make the sauce for the salad by put all of the corn salad ingredients except the kernels of one of the corns and the tbs of fresh cilantro, into a high powered blender and blend until smooth.


Step 2 Transfer the sauce into a mixing bowl.


Step 3 Add the kernels of the other corn and the cilantro to the sauce and stir well.


Step 4 Transfer the corn salad to a serving bowl. serve and enjoy.

Chef's Tips

  • For this recipe you will need a high powered blender.

  • I love to serve this corn salad as a sandwich filling with my raw vegan sandwich bread.
