About the Recipe
These wraps make for a great dinner any night of the week.
Ingredients
Wraps
10 - 20 large washed pechay leaves with stalks removed
Salad veggies
1 large chopped cucumber
14 halved cherry tomatoes
1 large chopped green bell pepper
1 peeled and shredded carrot
1 small chopped red onion
1/2 - 1 small head of seperated lettuce leaves
Filling
Preparation
Step 1 Lay one pechay leaf flat on a plate.
Step 2 Place 2 or 3 lettuce leaves and a small handful of the other chopped salad veggies on top of the lettuce.
Step 3 Put a generous spoonful of my Coronation ChickenLESS filling on top of the veggies.
Step 4 Pull both sides of the pechay leaf towards the middle to make a cone like shape.
Step 5 Place another pechay leaf around the wrap but this time from the front and wrap tightly this time with the two sides meeting at the back.
Step 6 Serve, enjoy and repeat.
Chef's Tips
This recipe can be enjoyed with any large hardy vegetable but my favorite to use as wraps are large pechay leaves.
